This multi-purpose recipe is an easy way to keep tomatoes fresh for a long time and can be used to add a nice zing to any dish that requires tomatoes!

What You’ll Need

4 cups of diced tomatoes

5 cloves of minced garlic

⅓ cup or 16 leaves of freshly sliced basil

¼ tsp of freshly cracked black pepper

1 tbsp of balsamic vinegar

2 tbsp of olive oil

½ of a freshly chopped onion (optional)

How You Do It

Cut up tomatoes, garlic, basil, and onion. Combine all fresh ingredients into container of choice. Add pepper, balsamic vinegar, and olive oil. Mix well and store in the fridge until you are ready to use the mixture.

 

What You Can Do With This

Make classic bruschetta place the bruschetta on top of some toasted French or Italian bread with some shredded Parmesan cheese

Quick pizza spread some of the tomato mix on top of a flour tortilla and add cheese and your favorite pizza toppings and bake until cheese is melted and tortilla is crispy

Creamy bruschetta pasta sauce combine 1 cup of the tomato mix with 1 cup of cream and ½ cup Parmesan cheese over medium heat and toss in your favorite pasta, veggies, and meat
